    WHAT IS GULA MELAKA?
    Gula Melaka is also known as
    Palm sugar.
    It
    is a
    sweetener
    derived from any variety of
    palm tree
    . Palm sugar is sometimes qualified by the type of palm, as in coconut palm sugar

    While sugars from different palms may have slightly different compositions, all are processed similarly and can be used interchangeably.

    To produce Gula Melaka you need to boil it until it thickens. The sticky sugar is then whipped and poured into containers made of bamboo tubes, where it solidifies. This thickening is done over an open fire, where all the magic happens. In the end, it can range in color from golden to dark brown or almost black. The consistency can vary from a thick gooey paste, to creamy granulated honey or to a rock-hard block.
    The smell of this treat is rich. You will find some smokier, fried nuts and coffee notes in it as well. The more intense is the smell, the more pure coconut sugar is in it for the base. The taste is super complex, and it ywill hit you with deep caramel, butterscotch, coffee and smokier note at the back. You can find also chocolate, almond, and even fruit notes. It depends on the date of picking flowers and conditions in the year of growing.
    In Asian cuisine, they use it for almost everything. For example
    , in Thailand, they are using it for balancing fish taste or enriching their sweet and sour dishes. In fact, you can use it in making all kinds of desserts. We got creative and made

    These pancakes are light and fluffy and made entirely from scratch. They?re not too sweet and are scented with vanilla, making them extra delicious. These are easy to adapt ? try adding a handful of berries, nuts or chocolate to the batter.
    *We call for unsalted butter in the recipe. You can use salted butter, but you may want to reduce the amount of salt used.

    YOU WILL NEED
    1 1/2 cups (195 grams) all-purpose flour
    2 tablespoons sugar
    1 tablespoon baking powder, see notes for substituting baking soda
    3/4 teaspoon kosher salt or 1/2 teaspoon of fine sea or table salt
    1 1/4 cups (295 ml) milk, dairy and non-dairy both will work
    1 large egg
    4 tablespoons unsalted butter, melted, plus more for skillet
    1 teaspoon vanilla extract.
