    Why Ceylon Coconut Sugar? When compared with Other Sugars
    There are important fatty acids which the world has set their focus upon. Few for example are Fish Oil containing ?Omega-3 fatty acid?, Olive Oil containing ?Oleic fatty acid?, and Mother?s breast milk is a rich source of ?Lauric fatty acid?. Without comprehensive theory, by observing the child?s growth "Lauric Acid" can be simply understood as immunity & brain power booster. Ceylon / Sri Lankan coconuts are the world?s richest natural source of Lauric acid (Approx. 50%).
    In coconut sugar manufacturing mixing of coconut sugar and refined cane sugar take place without a major effect on physical properties such as color and fragrance. Final effect will be on the GI, health benefits like energy supply and blood sugar level spikes.
    In Sri Lanka fresh coconuts sap is exclusively boiled to produce coconut sugar as a main product and not as a by-product. But in other parts of the world, the main product is coconut water produced by young coconuts (nutritional properties differ to mature coconuts). When coconut sugar is a by-product it has higher  GI, low fragrance and less flavor.

    It is recorded that Hawaiians anointed Captain James Cook with coconut oil during their Makahiki festival (ancient Hawaiian New Year Festival) in 1778, and that Captain Cook and his sailors were struck by the health and beauty of the people of Polynesian islands.
    Coconut oil was made at homes, from coconut milk or with sekkuwa (chekku) in past generations. This method of making coconut oil is named ?cold pressing?. There is no heating / baking of oil during milling. In the same manner using specially designed machines, coconut oil is pressed preserving its valuable nutrients. While cold pressing of virgin coconut oil, the oil cake produced simultaneously is crushed and powdered into Natural Coconut Flour.
