Maple sugar can be used as a
direct 1:1 substitute for white sugar in any recipe
, and is frequently used as a direct 1:1 substitute for brown sugar (though it is not moist like brown sugar). Maple sugar can also be used more selectively just as a topping on cookies, cakes, etc. The granules are more variable in size and shape than white sugar, and there are some notably larger granules--nice for a decorative cookie topping.
